In our research on this man, there was a great quote: "To run a restaurant well, you need a mature maitre d' who wants to give everything away and a chef who wants to be paid extra for every French fry." No, I don't understand it either, but in the evolution of the restaurant industry in British Columbia, the man who bought us the crossbow, the fondue pot and the BMW bike stands tall indeed. From Europe, to Shaughnessy Golf Club to Capilano Gardens to the William Tell, first on Richards, and then to the Georgian Court, with menus full of bundnerfleisch and zurcher geschnetzeltese, we have come back year after year to the hospitality of one of the town's great straight shooters, Erwin Doebeli.
